Grilled Nectarine, Gorgonzola & Arugula Salad (Guest Post by Lauren)

Grilled Nectarine, Gorgonzola and Arugula Salad

This was the first time that I grilled some fruit on the barbecue, and I'll tell you I was a little skeptical at first. But my oh my, is it ever delicious. Fruit is already delicious and I particularly love nectarines, but grilling them just puts them on a whole other level.
I have this theory that salads taste better in the summer. Maybe it's the fresh ingredients, or maybe it's the lightness of the meal, but this salad was out of this world. It's unbelievably easy too, so let's make it shall we? :)
On another note, I really don't like blue cheese, but seriously I just about ate the entire bowl of this. Take that, stinky blue cheese. I guess we're friends now.

Just look at those beautiful grill marks. Uhh hello flavour!

Grilled Nectarine, Gorgonzola & Arugula Salad
(recipe adapted from Yummy Mummy Kitchen)


• 3 nectarines
• Gorgonzola
• Arugula
• ½ cup Walnuts
• 1 tbsp butter
• 3 tbsp maple syrup
• Touch of cinnamon
• Olive Oil
• Balsamic Vinegar


Cut your nectarines in half and take the pits out. With skin side down drizzle with olive oil and a bit of salt and pepper. Put the nectarines on the grill flesh side down to get those yummy grill marks. These won't take too long (only about 2 minutes or so).

Make the candied walnuts by melting some butter and adding about a half cup walnuts. Make sure the walnuts get covered in butter then add the maple syrup and dash of cinnamon. Stir continually until the maple syrup evaporates completely and the nuts become sticky. Take off the heat and keep stirring so they don't stick to each other.

Assemble your salad by laying down your arugula, adding crumbled gorgonzola, the walnuts and then sliced grilled nectarine. Then drizzle some extra virgin olive oil and balsamic to finish it.
