Recipe - Spinach Waffles and goat cheese chantilly

Today I'd like to share a spinach waffles and goat cheese chantilly recipe. It's a super easy but classy recipe.


For about 14 waffles, you will need :
- Fresh spinach : 250g / 8.8 ounces
- Flour : 300g / 2 1/2 cups
- Baking powder : 10g / 2 teaspoons
- 2 eggs
- Milk : 400 ml / 1 3/4 cup
- Butter : 40g / 1/5 cup
- 1 pinch salt

Place all the ingredients in a large bowl and mix until smooth.

Reserve in the fridge for half an hour, before cooking them in your preheated waffle iron.


You will need :
Whipping cream (cold) : 300ml / 1 1/2 cup
Soft fresh goat cheese (cold) : 500g / 16 oz

Beat whipping cream at high speed with an electric mixer until soft peaks form.

In a separate bowl, whisk the goat cheese until it has softened. Gently fold in whipped cream.

You can decorate with rosemary, pears or edible flowers.

    And I think the green colour gives it a very healthy, flavorful look to those waffles and I want to eat them!! It's a shame I don't own a waffle iron :( Do you think I can use your recipe to make pancakes?

    Thanks for your comments about the waffles! I think you can definitely make pancakes with this recipe :) But maybe you'll need to put a little more milk and a little less baking powder. I hope you'll like it!! Now I'm a little nervous haha ;)

  3. What an interesting recipe!!! I love all things spinach.. I'm wondering how the spinach doesn't stick out everywhere if it isn't chopped? Maybe I'm missing something... but I am going to try these for sure... and I think that they'd work great as pancakes also!! What a great dinner or brunch recipe! Thanks!

  4. My mixer is quite powerful, so I just put the spinach leaves without chopping them up and it went fine, but of course you can chop the spinach before mixing it with the other ingredients!

    Love this, reminds me of my favorite brunch dish in NYC: Dill Pancakes with poached eggs, salmon caviar and creme fraiche! I would love to try this as a pancake so I don't have to lug the iron out.
