Today I'd like to share a spinach waffles and goat cheese chantilly recipe. It's a super easy but classy recipe.
STEP 1 : THE WAFFLES
For about 14 waffles, you will need :
- Fresh spinach : 250g / 8.8 ounces
- Flour : 300g / 2 1/2 cups
- Baking powder : 10g / 2 teaspoons
- 2 eggs
- Milk : 400 ml / 1 3/4 cup
- Butter : 40g / 1/5 cup
- 1 pinch salt
Place all the ingredients in a large bowl and mix until smooth.
Reserve in the fridge for half an hour, before cooking them in your preheated waffle iron.
STEP 2 : GOAT CHEESE CHANTILLY (GOAT CHEESE WHIPPED CREAM)
You will need :
Whipping cream (cold) : 300ml / 1 1/2 cup
Soft fresh goat cheese (cold) : 500g / 16 oz
Beat whipping cream at high speed with an electric mixer until soft peaks form.
In a separate bowl, whisk the goat cheese until it has softened. Gently fold in whipped cream.
You can decorate with rosemary, pears or edible flowers.
